Cabernet Sauvignon is a traditional, known since Roman times, a very popular late grape variety (Vitis vinifera) used to make red wines. This variety is one of the four most popular red wines in the world, along with Syrah, Pinot Noir and Merlot.
It probably comes from the French region of Bordeaux, where it most likely originated from a spontaneous cross between Cabernet Franc and Sauvignon Blanc.
Grass green notes, green pepper aromas, coarseness and harsh tannins appear in wine from unripe bunches and from the overloaded vines.
A typical mature Cabernet Sauvignon is dark garnet in color, sometimes with a bluish tint, the intensity increasing with age. The wine is full-bodied, with a tannic structure, requiring longer aging in the bottle, which gives it softness and pleasant roundness. The alcohol content should be about 13% vol.. The aroma is typically blackcurrant, the taste is powerful with a long aftertaste, spicy, strongly tannic in young wines, velvety in mature wines. In the aroma and taste, we can find notes of blackcurrant, cherry, blackberry, mulberry, green pepper, olives, violets, cedar wood, licorice, marmalade, dark chocolate, eucalyptus, tobacco, truffles, menthol, vanilla.
CS wines mature very slowly and are often barrel aged. Wine reaches its optimum in five to ten years, or even later. Therefore, CS wines are suitable for long-term storage.
