As the American writer Michael Pollan said, “You are what you eat.” Basically it is important to eat good food in order to be healthy and fit; moreover, we need to seriously think about what food means to us and why we eat it. Unlike in the past when people were in a hurry to survive, people crave more diverse and high-quality food now, as well as longing for the direct check on the production process. In this regard, Gimbap (Maki) with various ingredients is a great food for the holistic approach on the “food chains”: nature, environment (health), and the ecosystem.
